Sunday Brunch Omelet for One

(Serves 1)

Ingredients:

  • 1 teaspoon olive oil
  • 1/4 cup chopped onion
  • 1/8 cup (2 tablespoons) chopped red bell pepper
  • 1/2 cup pasteurized egg white
  • 1/2 teaspoon McCormick Perfect Pinch Original
  • Salt-free seasoning
  • 1 teaspoon freshly-grated parmesan cheese

Preparation

Heat oil over medium heat in an 8-inch frying pan. When a drop of water sizzles, it’s hot enough. Sauté onion and pepper for several minutes, until softened. Add egg white, seasoning and grated cheese.  Cook over medium heat until bottom is slightly browned and top is fully set. Fold in thirds, and allow omelet to rest in pan for a couple of minutes. Serve and enjoy!

Helpful Hint: Use a rasp-type grater such as a Microplane to make easy work of grating fresh parmesan.
