A kidney-friendly bowtie pasta salad with garlic and olive oil?  Yes, I'll have some more!  You'll want more of this dish, too, when you see the tasty ingredients in it and how easy it is to piece together.

Ingredients

 

  • 1/4 cup olive oil

  • 1 tablespoon balsamic vinegar

  • 1 clove garlic, minced

  • Pepper, to taste

  • 2 cups cooked bowtie pasta

  • 1/4 cup roasted red pepper, rinsed, chopped

  • 1/2 cup arugula, chopped

  • 1/2 cup cucumber, sliced

  • 1/4 cup fresh basil, chopped

  • 1/4 cup fresh parsley, chopped

  • 2 cups cooked chicken, diced or shredded


Preparation

 

In a small bowl, whisk together the olive oil, balsamic vinegar, garlic and pepper. Set aside.

In another salad bowl, add pasta. Pour in olive oil mixture and toss to coat. Add roasted red peppers, arugula, cucumber, basil, parsley and chicken, toss again. Divide evenly between 4 plates.
